From the Four Sisters Inns Cookbook. My sisters JoAnn,Gayle,Anita and I stayed at the Blue Lantern Inn,Dana Point CA My most favorite egg bake to eat and make! Serve with salsa,sour cream and avocado.

Mexican Quiche

Ingredients

6 eggs
1/4 cup flour
1 teaspoon baking soda
1 small can of mild green chilies chopped
2 cups cottage cheese
2 cups grated cheddar cheese of choice
1/2 cup half and half

Step by Step Instructions

Preheat oven to 400 degrees.
Whisk together eggs, flour and baking soda. Add chilies, cheeses and half and half.Pour into a quiche pan or 9X13 glass oró metal pan and bake 35-45 minutes more if refrigerated until knife inserted in the center comes clean and top set and golden.
