Andes Mint Cookies

Ingredients

1/2 cup butter, softened, 3/4 cup brown sugar, 1/2 cup granulated sugar, 1 tsp baking soda, 1 tsp baking powder, 1 tsp vanilla extract, 2 large eggs, 10 oz Andes mint baking chips, 2 and 2/3 cups all-purpose flour

Step by Step Instructions

1. Preheat oven to 350 degrees
2. Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed
3. Add Andes mints and mix
4. Add flour and continue to mix until all ingredients are well blended together
5. Cover and chill in the refrigerator for one hour
6. Spoon out 1 oz dough balls and slightly flatten
7. Place on parchment paper lined sheet pans and bake for 8-10 minutes
8. Cool on pan for a few minutes and move to a cooling rack
