Balsamic Salmon with Roasted Potatoes and Asparagus

Ingredients

  • 4-4oz Salmon Filets
  • 1 bunch asparagus spears or more if your family likes asparagus
  • 2 pounds red b potatoes, Medium diced
  • Balsamic Glaze
  • Olive Oil
  • Garlic Powder
  • Paprika
  • Kosher Salt and Pepper

Step by Step Instructions

1. Preheat oven to 400 degrees

2. Make Balsamic glaze – place 1 cup balsamic vinegar in a saucepan and reduce to 1/4 cup- place to the side

3. Place diced potatoes in a bowl, toss in 2 Tbsp Olive oil, I tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp granulated garlic and a half tsp of paprika and put in 400 degree oven for 20-25 minutes until brown and tender

4. Prep asparagus- break asparagus stems off where they naturally break toss in 1 Tbsp olive oil and a couple dashes of kosher salt and pepper

5. Place salmon Filets on a sprayed sheet pan and salt and pepper, place asparagus spears on the same sheet panand place in the oven when the roasted potatoes are about 10 minutes from being done as the salmon and asparagus will take about 10-15 minutes to cook in a 400 degree oven.

6. Remove from oven and drizzle the balsamic glaze over the salmon.
