Mediterranean Quinoa Steak Salad

Ingredients
- 2 cups cooked quinoa
- 1 ea large or 2 small cucumber peeled and seeded and diced
- 1 cup medium diced roma tomato
- 1 ea avocado peeled, pit out and Julienned (do this at the end)
- 1 c pickled red onion (julienne red onion, 1 clove garlic and place in bowl- in a small sauce pot 3/4 cup apple cider vinegar, 2.75 Tbsp white sugar, 1/2 Tbsp kosher salt and bring to boil, strain and pour over julienne onions and garlic- this will keep in fridge for about 3 weeks)
- 1/4 cup crumbled feta
- ½ cup feta cheese

Step by Step Instructions
1. Salt and Pepper NY Strip Steak, let rest
2. Cook Quinoa as per directions, let cool
3. Prep Vegetables as stated above, put together in a large bowl, add cooked Quinoa and toss in 1 cup of Garlic Mayo
4. Grill Steak, Julienne
6. Prep Avocado
7. Put julienned steak and avocado on top of the salad mixture and enjoy
