Chicken Fajitas with Cilantro Jasmine Rice

Ingredients

For the Chicken Fajitas:
1 pound Chicken Breast, julienned
1 each Green Bell Pepper, julienned
1 each Red Bell Pepper, julienned
1 medium Red Onion, julienned
1/2 bunch Cilantro, chopped
1 lg Lime, juiced
1 T Fresh Garlic, chopped
3 T Olive Oil
Salt and Pepper to taste

For the Rice:
1 C Jasmine Rice, rinsed well
1.5 C Water (if using a rice cooker follow rice cooker directions)
1/2 bunch cilantro, finely chopped
1 T Cumin
1 each Lime Juiced
Salt and Pepper to taste

8 each Fajita Size Tortilla’s
Sour Cream
Salsa

Step by Step Instructions

1. In a sauce pan place water, Cumin bring to a boil and add rice, cover and turn down to a simmer- when Rice is done finish with Lime, chopped Cilantro and Salt and Pepper to taste
2. While rice is cooking heat up a skillet or a LARGE saute pan and when hot add Olive Oil, and Chicken saute and add Peppers and Onions, garlic and cilantro when chicken is close to being cooked continue to \saute until Chicken is cooked and Peppers and Onions are fork tender. Salt and Pepper to taste
3. Bring all items to the table and enjoy!
