Basil Citrus Salmon with Wild Rice and Sauteed Pea Pods

Ingredients

1 Pound Fresh Salmon cut into 4 ounce portions
1 T Olive Oil
1/2 tsp Kosher Salt
1/4 tsp Black Pepper
2 T Fresh Basil, Finely Chopped
1/2 Cup Orange Juice Concentrate
1 Lemon, Juiced
Kosher Salt, to taste
Black Pepper, to taste

1 Pound Pea Pods, cleaned
2 T Olive Oil
Salt and Pepper to taste

1 cup Wild Rice Blend, made as per directions

Step by Step Instructions

1. Preheat oven to 350 degrees
2. Start Cooking your Wild Rice as per the directions
3. Place OJ concentrate, lemon Juice, Basil in a sauce pan and bring to a soft boil, turn down and simmer- salt and pepper to taste, set aside
4. Once the oven is preheated place salmon on a sheet pan brush with Olive Oil and season lightly with Kosher Salt and Pepper Cook for about 10 Minutes or Until Salmon has reached an internal temperature of 145 degrees
5. Heat a Saute Pan on the Stove, once hot add 2 T Olive Oil and Pea Pods, saute until Pea Pods are tender and season to taste with Kosher Salt and Pepper
6. Pull Salmon from oven and top with the basil citrus sauce
7. Put all items together on the table and enjoy!
