This is an easy recipe to throw together when you’re looking to get dinner on the table quickly.
It’s sweet and savory, and very adaptable to your own tastes.
Total time, about 20 minutes.
Ingredients
- 2 pounds Shrimp – thawed and deveined
- 2 teaspoons oil
- 2 teaspoons lemon zest
- 4-5 cloves garlic – minced
- 1/2 teaspoon red pepper flakes
- 2 teaspoons cornstarch
- 6 Tablespoons low sodium soy sauce
- 1/3 cup honey
- 1 tablespoon + 1 teaspoon sriracha sauce
- 1 tablespoon +1 teaspoon rice wine (can substitute chicken broth)
- 2 green onions – chopped
Step by Step Instructions
1. Thaw shrimp by putting them in a bowl and running COLD water over them. They will thaw quickly, around 10 minutes.
2. While shrimp is thawing, use this time to assemble the sauce by combining the soy sauce, honey, sriracha, rice wine and corn starch. Set aside.
3. Pull tails off, if desired
4. Toss shrimp in oil, lemon zest, garlic and red pepper flakes
5. In a large skillet, heat to a medium/high. When hot, add the shrimp and lay them flat
6. Turn shrimp after about 2-3 minutes. They should be curling up and turning pink. Cook for another 2-3 minutes on that side.
7. Add the sauce to the pan and cook further until the sauce is thick and bubbly, and that the shrimp is cooked to an internal temperature of at least 145 degrees Fahrenheit
8. Garnish with chopped green onions
9. Serve with cooked white rice and steamed vegetables to complete the meal
